Ham & Cheese Stuffing Cups

These are a favorite of my family, and I make them with just about any leftover meat from the fridge. Tonight I decided to try them with ham that I had frozen from our Christmas dinner.

Use a box of Stove Top Stuffing OR store brand, because they both come out great.


Ham & Cheese Stuffing Cups

One Box of Stuffing, any flavor
1 Cup (cooked) chopped ham, chicken, ground beef, or ground turkey
 ~~Try leftover taco meat and add a bit of salsa. 
1 Cup shredded cheese, your choice, or whatever is complimentary to your meat.
 ~~  I add Swiss to ham, and Pepper Jack is really good with ground beef. 

Preheat oven to 350° 
Prepare stuffing according to directions.  Mix in cheese first, then add the meat. Blend well, then spoon into greased muffin pans. Bake 20 minutes or until tops are brown.

Makes 6 muffin cup servings.
