I just love a turkey sandwich from leftover Thanksgiving turkey. I think that I almost (almost) enjoy it more than the entire dinner. And I find that mom was right, the pumpkin pie gets better after a few days when the flavors meld together. So that's what I'm having for today's lunch while I'm watching the snow fall and starting on my Christmas cards, and man, it's terrific! (the lunch, not the snow!)
After mom passed away (Ihave a hard time typing died - it seems so unbelievable) I started to cook my own turkey dinner on the Sunday following Thanksgiving. At first I did it to accommodate my step-daughters, who can't seem to say no the their mother and spend Thanksgiving with the Lapp family, but could make it on another day. But after the first year, and a successful meal, I decided that I was going to do it for myself, for my mom, for Erica, to carry on the Bogaard traditions. And like the pumpkin pie, I have melded together two wonderful women's' recipes and come up with an awesome meal. My favorites are Martha's stuffing and gravy, but my mom's pumpkin pie. Since mom didn't leave me written instructions, I use Martha's and my turkey couldn't be better. I know Mark would never say it, but my dinner is so close to his mom's that it's almost the same. And the best part.... leftovers! No sharing the stuffing. No dividing the pie or cheesecake. No splitting up the dark meat. The downside..... every dish in the house to be washed.
